Super Healthy Recipe: Sea Bass with Pesto Sauce
Need a little inspiration for your dinner that’s healthy and nutritious? Today’s heart warming dinner is sure to get your mouth watering – Sea Bass with Pesto Sauce served on a bed of watercress salad and baby new potatoes.
Here’s what you need:
- 4 whole fresh Sea Bass
- 40g toasted walnut pieces
- 40g spring onions
- 1 clove garlic
- 10g fresh parsley
- 3 tbsp extra virgin olive oil
- Pack of fresh watercress
- Baby new potatoes serving for 4 people
Prep time: 20 mins
Cooking time: 25 mins
Preheat the oven to 200 degrees C or Gas Mark 7. Rinse and dry the fish and make three diagonal slits across both sides and then place in a roasting tin that has been lightly lined with oil.
Take the toasted walnuts, chopped spring onions , garlic, 2 tablespoons of fresh chopped parsley and oil and blend together to make the pesto. When the sauce is smooth add seasoning to suit your taste.
Spread the pesto sauce over the fish and inside the slits then bake for 25 minutes.
Boil the baby new potatoes and serve on the side with the fish placed on a bed of watercress.
Season to taste and enjoy!
