Super Healthy Recipes – Proper Scouse
Today’s healthy recipe is Proper Scouse served with roasted beetroot, or also known as Lobscouse. A hearty Liverpudlian meat stew that’s delicious, nutritious and great for maintain energy. Cook up a batch and eat a couple of times during the week.
And here’s what you need:
- Oil for frying
- 900g neck of lamb on the bone
- 1 sliced onion
- 3 carrots roughly sliced
- 1 tbsp tomato puree
- 450g potatoes, peeled and cut into big chunks
- 1 litre lamb stock
- Splash of Worcestershire sauce
For the roast beetroot
- 450g beetroot cut into wedges
- 125g demerera sugar
- 125ml red wine vinegar
- 1 bay leaf
- Small handful thyme
Prep time: 20 mins
Cook time: 150 mins
Heat the oil in a flameproof casserole dish and brown the lamb on all sides. Transfer the meat to a plate and leave to one side while cooking the vegetables.
Fry the onion and carrots for 2 minutes then add the tomato puree and cook for a further 4 minutes.
Return the meat to the pan and add the potatoes, stock and Worcestershire sauce. Cover and cook on a low heat for 2.5 hours until very tender. Top up with a little water if the stew looks dry during cooking.
For the roast beetroot preheat the oven to 180 degrees/gas mark 4, 45 minutes before the meat is ready.
Toss the beetroot in the sugar, vinegar and herbs then season with a little salt and pepper, before placing in a roasting tray, cover with foil, and roast for 40 minutes.
Serve with the beetroot on the side.
